Description
This recipe is for baked stuffed potatoes. It is a delicious side dish that can be made with frozen or fresh potatoes.
Ingredients
- 5 large baking potatoes
- 2 tablespoons butter
- 5 green onions, chopped
- 1/2 cup butter
- 1 pint sour cream
- Milk
- Salt
- Pepper
- Garlic powder
- Cayenne pepper
- Parmesan cheese
- Paprika
Method
- Preheat the oven to 400 degrees.
- Bake the potatoes for about 1 hour or until they are soft enough to squeeze.
- In a pan, saute the green onions in 2 tablespoons of butter.
- Slice off the top of each potato and scoop out the insides into a bowl.
- Using an electric mixer or potato masher, whip the potato with 1/2 cup of butter, 1 pint of sour cream, and the sauteed onions.
- Add a little milk to achieve a softer texture.
- Season with salt, pepper, garlic powder, and a touch of cayenne pepper to taste.
- Spoon the mixture back into the empty potato shells.
- If desired, refrigerate at this point.
- Sprinkle with Parmesan cheese and paprika.
- Place the potatoes on a cookie sheet and bake at 350 degrees for about 20 minutes, or until heated through and the top is lightly browned.
