Description

This recipe is for baked stuffed potatoes. It is a delicious side dish that can be made with frozen or fresh potatoes.


Ingredients

  • 5 large baking potatoes
  • 2 tablespoons butter
  • 5 green onions, chopped
  • 1/2 cup butter
  • 1 pint sour cream
  • Milk
  • Salt
  • Pepper
  • Garlic powder
  • Cayenne pepper
  • Parmesan cheese
  • Paprika

Method

  1. Preheat the oven to 400 degrees.
  2. Bake the potatoes for about 1 hour or until they are soft enough to squeeze.
  3. In a pan, saute the green onions in 2 tablespoons of butter.
  4. Slice off the top of each potato and scoop out the insides into a bowl.
  5. Using an electric mixer or potato masher, whip the potato with 1/2 cup of butter, 1 pint of sour cream, and the sauteed onions.
  6. Add a little milk to achieve a softer texture.
  7. Season with salt, pepper, garlic powder, and a touch of cayenne pepper to taste.
  8. Spoon the mixture back into the empty potato shells.
  9. If desired, refrigerate at this point.
  10. Sprinkle with Parmesan cheese and paprika.
  11. Place the potatoes on a cookie sheet and bake at 350 degrees for about 20 minutes, or until heated through and the top is lightly browned.
