Ingredients

Roast

  • 2 Whole Heads Garlic
  • 2 Lbs Roma tomatoes
  • 4 Whole Shallots (2 Small Yellow Onions)
  • 1 Tbsp Coarse Salt
  • 2 Tsp Ground Black Pepper
  • 1 tsp Oregano
  • 1/3 Cup Olive oil
  • 11/2 Tsp Red Chili Flakes

Soup Base

  • 1/3 cup Sherry cooking wine
  • 2 Cups Chicken Broth
  • 1 Tbsp Tomato Paste
  • 2 Tbsp Chopped Basil
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Italian Seasoning
  • 3 Tbsp Salted Butter
  • 1/2 Cup Fresh Parmesan
  • Fresh Basil (for garnish)
  • Parmesan (for garnish)

Method

  1. In a large pot, heat olive oil over medium heat.
  2. Add garlic and shallots and cook until fragrant, about 2 minutes.
  3. Add tomatoes, salt, black pepper, oregano, and red chili flakes. Cook for 5 minutes, stirring occasionally.
  4. Pour in sherry cooking wine and let it cook for 2 minutes.
  5. Add chicken broth, tomato paste, basil, onion powder, garlic powder, and italian seasoning. Stir to combine.
  6. Let the soup simmer for 15 minutes.
  7. In a separate pan, melt butter over medium heat.
  8. Add parmesan and stir until melted and combined.
  9. Pour the melted butter and parmesan mixture into the soup and stir to combine.
  10. Let the soup simmer for an additional 5 minutes.
