Ingredients
Roast
- 2 Whole Heads Garlic
- 2 Lbs Roma tomatoes
- 4 Whole Shallots (2 Small Yellow Onions)
- 1 Tbsp Coarse Salt
- 2 Tsp Ground Black Pepper
- 1 tsp Oregano
- 1/3 Cup Olive oil
- 11/2 Tsp Red Chili Flakes
Soup Base
- 1/3 cup Sherry cooking wine
- 2 Cups Chicken Broth
- 1 Tbsp Tomato Paste
- 2 Tbsp Chopped Basil
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1/2 Tsp Italian Seasoning
- 3 Tbsp Salted Butter
- 1/2 Cup Fresh Parmesan
- Fresh Basil (for garnish)
- Parmesan (for garnish)
Method
- In a large pot, heat olive oil over medium heat.
- Add garlic and shallots and cook until fragrant, about 2 minutes.
- Add tomatoes, salt, black pepper, oregano, and red chili flakes. Cook for 5 minutes, stirring occasionally.
- Pour in sherry cooking wine and let it cook for 2 minutes.
- Add chicken broth, tomato paste, basil, onion powder, garlic powder, and italian seasoning. Stir to combine.
- Let the soup simmer for 15 minutes.
- In a separate pan, melt butter over medium heat.
- Add parmesan and stir until melted and combined.
- Pour the melted butter and parmesan mixture into the soup and stir to combine.
- Let the soup simmer for an additional 5 minutes.
