This refreshing and flavorful salad is perfect for a hot summer day. The cucumber noodles are coated in a delicious peanut gochujang sauce, making it a unique and tasty dish.
Ingredients
- 2 Cucumbers
- 2 tbsp smooth peanut butter (sub for tahini)
- 1 tbsp gochujang paste
- 1 tsp minced garlic
- 1 tsp chili garlic crisp
- 1 1/2 tsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 2-3 tbsp hot water
- 1 tbsp toasted sesame oil
- 4 green onions, thinly sliced
- 1 tsp toasted sesame seeds
Method
- In a serving bowl, combine the peanut butter, gochujang, soy sauce, sugar, hot water, chili garlic crisp, garlic, and rice vinegar. Set aside.
- Make the cucumber noodles using a julienne peeler or vegetable spiral slicer. Add the cucumber noodles to the peanut dressing and add the sesame oil, stirring to coat the noodles. Top with green onion and toasted sesame seeds.
