Description
These are the best lemon rolls! They’re soft and fluffy lemon rolls, with a gooey lemon sugar filling and lemon cream cheese frosting.
Ingredients
- 1 1/4 cups (300 ml) whole milk, warmed to about 110 degrees
- 2 1/4 tsp active dry yeast
- 1 tsp granulated white sugar (to bloom the yeast)
- 4 3/4 cups (593 g) all-purpose flour, spooned and leveled
- 1 1/2 tsp salt
- 2 tbsp (25 g) granulated white sugar
- 2 eggs, whisked
- 1/2 cup (112 g) unsalted butter, very softened
- 1/2 tbsp vanilla
- 2 tbsp (20 g) lemon zest (about 2 lemons zested)
- 1/2 cup (112 g) unsalted butter, very softened
- 1/2 cup (110 g) brown sugar
- 1/2 cup (100 g) granulated white sugar
- 2 tbsp (20 g) lemon zest (about 2 lemons zested)
- 2 tbsp (30 ml) fresh lemon juice
- 1/4 tsp salt
- 1/4 cup (60 ml) heavy cream (for pouring in between the rolls)
- 1/4 cup (56 g) unsalted butter, softened
- 4 oz (113 g) cream cheese, cold
- 3/4 cup (97 g) powdered sugar
- 1/2 tbsp (5 g) lemon zest (about 1/2 lemon zested)
- 1/2 tbsp fresh lemon juice
Method
- In a large bowl, combine milk, yeast, and 1 tsp sugar. Let sit for 5 minutes until foamy.
- Add flour, salt, 2 tbsp sugar, eggs, 1/2 cup butter, vanilla, and 2 tbsp lemon zest to the bowl with the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise for 1 hour.
- In a separate bowl, mix together 1/2 cup butter, brown sugar, white sugar, 2 tbsp lemon zest, 2 tbsp lemon juice, and salt until well combined.
- Roll out the dough into a large rectangle and spread the lemon sugar mixture evenly over the dough.
- Roll up the dough tightly and cut into 12 equal pieces.
- Place the rolls in a greased 9x13 inch baking dish and pour heavy cream in between the rolls.
- Cover and let rise for 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake the rolls for 25-30 minutes until golden brown.
- In a small bowl, mix together softened butter, cream cheese, powdered sugar, lemon zest, and lemon juice until smooth.
- Spread the frosting over the warm rolls and serve.
