Description
This recipe for Chicken and Bacon Baked in Bread Sauce is a delicious and unique twist on traditional bread sauce. The chicken and bacon are baked in a creamy bread sauce, creating a flavorful and satisfying dish.
Ingredients
- 2½ cups whole milk
- 2 teaspoons English mustard
- 4 small bay leaves
- 2 large eggs
- ½ a nutmeg
- 2 cloves
- 10½ slices of bread (10½ oz total)
- 4 large chicken thighs, skin on, bone in
- 2 slices of smoked bacon
- salt
- pepper
- olive oil
- 1 small cauliflower (optional)
- 3 oz Cheddar cheese (optional)
Method
- Preheat the oven to 350°F.
- Peel, halve, and finely slice the onion, place in a 9 x 13-inch roasting pan with the milk, mustard, bay leaves, and eggs.
- Grate in the nutmeg and cloves, and add a pinch of sea salt and black pepper.
- Slice the crusts off the bread and reserve, tear the middle of the bread into the roasting pan, then really scrunch and mix it all together.
- Dunk the reserved crusts in the mixture and arrange around the edge of the pan.
- Rub the chicken thighs with a little salt, pepper, and olive oil.
- Nestle the chicken thighs into the roasting pan, skin side up.
- Halve and add the bacon slices.
- Roast for 50 minutes, or until golden.
- Serve with seasonal greens.
VEGGIE LOVE:
- Break 1 small cauliflower into chunky florets, leaving any nice leaves intact.
- Toss in olive oil, salt, and pepper.
- Use in place of the chicken and bacon.
- Grate in 3 oz of Cheddar cheese.
