This Beef Tenderloin Recipe with Mushroom Sauce is a holiday-worthy and impressive main course. Learn how to prep, tie, and cook a beef tenderloin roast in the oven.
Ingredients
- 2 lb beef tenderloin (trimmed and tied (at room temperature for 1 to 2 hours))
- 1 1/2 tsp salt ((we use fine sea salt))
- 1 tsp black pepper (freshly ground)
- 2 garlic cloves (minced)
- 1/2 Tbsp fresh thyme leaves (minced)
- 2 Tbsp extra light olive oil
- 2 Tbsp unsalted butter
- 1 Tbsp extra light olive oil
- 1/2 cup yellow onion (finely chopped)
- 16 oz baby Bella mushrooms (thickly sliced)
- 2 garlic cloves (minced)
- 1/2 Tbsp fresh thyme leaves (minced (or 1/2 tsp dried thyme))
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper (freshly ground)
- 1/2 cup dry red wine (Pinot Noir, Merlot, Cabernet, Sauvignon)
- 1 cup beef broth
- 1/2 cup heavy whipping cream
Method
- Preheat oven to 425°F.
- In a small bowl, combine salt, black pepper, minced garlic, and minced thyme. Add olive oil and mix until well combined.
- Place beef tenderloin on a baking sheet and rub the seasoning mixture all over the meat.
- In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the beef tenderloin and sear on all sides until browned, about 3-4 minutes per side.
- Transfer the beef tenderloin to a roasting pan and roast in the oven for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.
- Remove the beef tenderloin from the oven and let it rest for 10 minutes before slicing.
- In the same skillet used to sear the beef, add onion and mushrooms. Cook until the mushrooms are browned and the onions are translucent, about 5-7 minutes.
- Add minced garlic, minced thyme, salt, and black pepper. Cook for an additional minute.
- Pour in red wine and scrape the bottom of the pan to deglaze it.
- Add beef broth and let it simmer until the liquid is reduced by half.
- Stir in heavy whipping cream and let it cook for 2-3 minutes, or until the sauce thickens.
- Serve the sliced beef tenderloin with the mushroom sauce on top. Enjoy!
