Description
A homemade graham cracker crust filled with a creamy, tart and sweet key lime filling topped with vanilla bean whipped cream.
Ingredients
- 12 graham crackers
- 7 tbsp melted butter
- 1/4 cup granulated sugar
- 4 oz softened cream cheese
- 3 egg yolks
- 14 oz sweetened condensed milk
- 1/2 cup heavy whipping cream
- 1/2 cup key lime juice
- 3/4 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1/2 tsp vanilla bean paste
Method
- Preheat the oven to 350°F.
- In a food processor, crush the graham crackers until they are fine crumbs.
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture into a 9-inch pie dish, making sure to press it evenly on the bottom and up the sides.
- Bake the crust for 10 minutes, then let it cool completely.
- In a separate mixing bowl, beat the softened cream cheese until smooth.
- Add in the egg yolks one at a time, mixing well after each addition.
- Gradually add in the sweetened condensed milk, mixing until well combined.
- Slowly pour in the heavy whipping cream and key lime juice, mixing until the filling is smooth.
- Pour the filling into the cooled crust and bake for 15 minutes.
- Let the pie cool completely, then refrigerate for at least 2 hours.
- In a mixing bowl, beat the heavy whipping cream until soft peaks form.
- Gradually add in the powdered sugar and vanilla bean paste, beating until stiff peaks form.
