Description

A homemade graham cracker crust filled with a creamy, tart and sweet key lime filling topped with vanilla bean whipped cream.


Ingredients

  • 12 graham crackers
  • 7 tbsp melted butter
  • 1/4 cup granulated sugar
  • 4 oz softened cream cheese
  • 3 egg yolks
  • 14 oz sweetened condensed milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup key lime juice
  • 3/4 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla bean paste

Method

  1. Preheat the oven to 350°F.
  2. In a food processor, crush the graham crackers until they are fine crumbs.
  3. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  4. Press the mixture into a 9-inch pie dish, making sure to press it evenly on the bottom and up the sides.
  5. Bake the crust for 10 minutes, then let it cool completely.
  6. In a separate mixing bowl, beat the softened cream cheese until smooth.
  7. Add in the egg yolks one at a time, mixing well after each addition.
  8. Gradually add in the sweetened condensed milk, mixing until well combined.
  9. Slowly pour in the heavy whipping cream and key lime juice, mixing until the filling is smooth.
  10. Pour the filling into the cooled crust and bake for 15 minutes.
  11. Let the pie cool completely, then refrigerate for at least 2 hours.
  12. In a mixing bowl, beat the heavy whipping cream until soft peaks form.
  13. Gradually add in the powdered sugar and vanilla bean paste, beating until stiff peaks form.
