This Shrimp Pasta Salad is a delicious and easy dish that is perfect for a summer cookout or potluck. It features tender shrimp, hard-boiled eggs, and a creamy dressing with a kick of heat.


Ingredients

  • 1 box small shell pasta
  • 3 hard-boiled eggs, chopped
  • ½ red onion, finely chopped
  • Medium raw shrimp (as much as you like)
  • Mayonnaise
  • Cocktail sauce (or a mix of ketchup and horseradish)
  • Optional: hot sauce for heat
  • Salt and pepper to taste

Method

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. Boil the eggs, peel, and chop.
  3. Boil the shrimp until just cooked (don’t overcook!). Drain, peel if needed, and let cool.
  4. In a large bowl, combine pasta, eggs, shrimp, and red onion.
  5. Add mayonnaise and cocktail sauce (or your preferred mix) to taste. Adjust based on how creamy you like it.
  6. Season with salt, pepper, and hot sauce if using.
