This Shrimp Pasta Salad is a delicious and easy dish that is perfect for a summer cookout or potluck. It features tender shrimp, hard-boiled eggs, and a creamy dressing with a kick of heat.
Ingredients
- 1 box small shell pasta
- 3 hard-boiled eggs, chopped
- ½ red onion, finely chopped
- Medium raw shrimp (as much as you like)
- Mayonnaise
- Cocktail sauce (or a mix of ketchup and horseradish)
- Optional: hot sauce for heat
- Salt and pepper to taste
Method
- Cook the pasta according to package instructions. Drain and let cool.
- Boil the eggs, peel, and chop.
- Boil the shrimp until just cooked (don’t overcook!). Drain, peel if needed, and let cool.
- In a large bowl, combine pasta, eggs, shrimp, and red onion.
- Add mayonnaise and cocktail sauce (or your preferred mix) to taste. Adjust based on how creamy you like it.
- Season with salt, pepper, and hot sauce if using.
