Description

This recipe is a popular version of a refined mac and cheese. It uses white cheddar cheese and can be customized with various accompaniments.


Ingredients

  • 265g Water or milk
  • 11g Sodium citrate
  • 285g cheese of your choice, finely grated
  • 240g Dry macaroni
  • Water as needed for pasta cooking
  • Salt to taste (and for your pasta water)

Method

  1. Combine water or milk, sodium citrate, and white cheddar cheese in a pot. Whisk to dissolve and bring to a simmer over medium heat.
  2. Bring a large pot of water to a boil.
  3. Boil the dry macaroni until al dente according to the package directions, about 5-6 minutes.
  4. Drain the pasta. Do not rinse.
  5. Stir in the warm cheese sauce and fold in any accompaniments you wish to add.
  6. Season the mac and cheese with salt to taste.
  7. Serve immediately.
