Description
This recipe is a popular version of a refined mac and cheese. It uses white cheddar cheese and can be customized with various accompaniments.
Ingredients
- 265g Water or milk
- 11g Sodium citrate
- 285g cheese of your choice, finely grated
- 240g Dry macaroni
- Water as needed for pasta cooking
- Salt to taste (and for your pasta water)
Method
- Combine water or milk, sodium citrate, and white cheddar cheese in a pot. Whisk to dissolve and bring to a simmer over medium heat.
- Bring a large pot of water to a boil.
- Boil the dry macaroni until al dente according to the package directions, about 5-6 minutes.
- Drain the pasta. Do not rinse.
- Stir in the warm cheese sauce and fold in any accompaniments you wish to add.
- Season the mac and cheese with salt to taste.
- Serve immediately.
