    • Not the same as his Sicilian, but I like it better

Ingredients

  • 2 tablespoons (30ml) extra-virgin olive oil
  • 3 medium cloves garlic, minced
  • 1.5 t dried oregano
  • Dash red pepper flakes
  • 1 (28-ounce; 800g) can high-quality peeled tomatoes
  • 1 t granulated garlic powder
  • 1 t granulated onion powder
  • 3/4 t sugar
  • anchovy paste?
  • basil?
  • Kosher salt, to taste

Method

  1. Heat 2 tablespoons (30ml) olive oil in a medium saucepan over medium heat until shimmering.
  2. Add minced garlic, oregano, and pepper flakes and cook, stirring, until fragrant, about 30 seconds.
  3. Add tomatoes, garlic powder, onion powder, and sugar. Crush tomatoes. Bring to a simmer and cook until reduced to about 3 cups, about 30 minutes.
  4. Season to taste with salt.
