Description
German side dishes that quietly appears at almost every summer BBQ. Nothing fancy. Just comforting, fresh and made to share. If you grew up in Germany, there’s a good chance this was sitting somewhere on the table next to grilled meat, bread and garden salads.
Ingredients
- 1 kg waxy potatoes
- 1 cucumber
- 1 small red onion or shallot
- fresh chives or dill Dressing:
- 5 tbsp light vinegar (I used a mild herb vinegar)
- 6 tbsp oil (traditionally a neutral oil, but I used olive oil)
- 1 tsp mustard
- 1 tsp sugar
- 100 ml warm vegetable broth
- salt & black pepper
Method
- Boil the potatoes until fork tender.
- Slice while still warm.
- Thinly slice the cucumber and onions.
- Warm the broth with vinegar, mustard, sugar, salt and pepper.
- Pour over the warm potatoes and let soak.
- Add cucumber, onions and herbs.
