This Mint Salsa Verde is a refreshing and flavorful condiment that brings a delightful twist to traditional salsa verde!
Ingredients
- 2 bunches of fresh parsley
- 1 bunch of fresh mint
- 2 tbsp salted capers
- 3 garlic cloves
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- 2/3 cup extra virgin olive oil
Method
- Coarsely chop the fresh parsley and mint. Place in a food processor.
- Drain the capers and add to the food processor.
- Add garlic, mustard, vinegar, and olive oil, and process until combined and smooth. Season with salt and pepper.
