This Mint Salsa Verde is a refreshing and flavorful condiment that brings a delightful twist to traditional salsa verde!


Ingredients

  • 2 bunches of fresh parsley
  • 1 bunch of fresh mint
  • 2 tbsp salted capers
  • 3 garlic cloves
  • 1 tbsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 2/3 cup extra virgin olive oil

Method

  1. Coarsely chop the fresh parsley and mint. Place in a food processor.
  2. Drain the capers and add to the food processor.
  3. Add garlic, mustard, vinegar, and olive oil, and process until combined and smooth. Season with salt and pepper.
