Description
This zesty pasta salad is perfect for a summer BBQ or potluck. It’s packed with fresh ingredients and a tangy dressing that will have everyone coming back for seconds.
Ingredients
- 2-3 boxes rotini noodles
- 1 block feta cheese, crumbled
- 1 bunch cilantro, chopped
- 1 cup green olives, sliced
- 1 bottle zesty Italian dressing
- 1 jar artichoke hearts, drained and chopped
- 1 small red onion, diced
- 1 container mini mozzarella balls
- 2 tomatoes, diced
- Optional: A splash of rice vinegar (for extra tang)
Method
- Cook the pasta Boil rotini noodles according to the package instructions. Drain and rinse with cold water to cool.
- Prep the ingredients While the pasta cooks, chop all other ingredients: cilantro, olives, artichoke hearts, red onion, and tomatoes.
- Combine In a large mixing bowl, toss the cooled pasta with chopped ingredients, feta, and mozzarella balls.
- Dress it up Pour in the bottle of zesty Italian dressing and add a splash of rice vinegar if desired. Mix until evenly coated.
- Chill and serve
