Description

This zesty pasta salad is perfect for a summer BBQ or potluck. It’s packed with fresh ingredients and a tangy dressing that will have everyone coming back for seconds.


Ingredients

  • 2-3 boxes rotini noodles
  • 1 block feta cheese, crumbled
  • 1 bunch cilantro, chopped
  • 1 cup green olives, sliced
  • 1 bottle zesty Italian dressing
  • 1 jar artichoke hearts, drained and chopped
  • 1 small red onion, diced
  • 1 container mini mozzarella balls
  • 2 tomatoes, diced
  • Optional: A splash of rice vinegar (for extra tang)

Method

  1. Cook the pasta Boil rotini noodles according to the package instructions. Drain and rinse with cold water to cool.
  2. Prep the ingredients While the pasta cooks, chop all other ingredients: cilantro, olives, artichoke hearts, red onion, and tomatoes.
  3. Combine In a large mixing bowl, toss the cooled pasta with chopped ingredients, feta, and mozzarella balls.
  4. Dress it up Pour in the bottle of zesty Italian dressing and add a splash of rice vinegar if desired. Mix until evenly coated.
  5. Chill and serve
